Kinda off topic but... those Q6600 processors were something special.  I'm still running one as my daily driver with a good video card and an SSD and the latest Windows 10!  Clicks along just fine still.  I have another upstairs that is in an older Dell motherboard that like Lamar's won't take more than 4g Ram =( but it's in my sunroom as a go-to PC when one is needed quickly or I just wanna do a little work from upstairs.  Also has an SSD and Win1010. <-- not to be confused with Ren 10 10. =)

From my recent experience, CentOS 7 struggles on the Dell Optiplex 620, and even the later 755 model.

I have a production machine that is a 745, but I loaded it with the full 4GB of RAM (older rev of the board that won't handle 8GB), popped a Core2Quad Q6600, and put a decent video card.  The video card was the real key, since GNOME 3 requires GPU power.  If I ran Mate instead of GNOME on it it would be faster.  I have my M-Audio Delta 1010LT in it, and while Mixbus isn't fast on it it does work ok for all channels.  For the mix I use my laptop, a Dell Precision M6700 (Core i7-3740QM w/16GB, 256GB SSD boot, 1TB data, CentOS 7) that I got used for less than 10% of retail price; with hyperthreading it acts like eight cores, and is plenty fast enough for anything I want to do with Mixbus).

Video GPU is the key for GNOME 3 performance, regardless of distribution.
OTOH, CentOS 6.x runs quite fine ... that's the RD machine I just fired up last week here on a cast-off 755.

C6 is a better choice for integrated video or older machines, for sure, even 64-bit.
Also, Ubuntu 16.04 LTS works quite zippily (if I can coin that word) on the 755.  Most of the ~25+ Optiplex 620s I'm about to get rid of at work (as freebies!) have leaking capacitors on the motherboard, even though they power on and seem to work.  I've figured that they're not worth my time without the proper desoldering station to recap them.
There are very few reasons to re-cap anything commodity these days. The last re-cap I deemed to be reasonable was replacing three plague-infested 2200uF caps on an industrial single-board passive backplane Pentium 233 system.  The software wouldn't run on anything newer, and those industrial SBCs are built like tanks.
