An .iso is a bit for bit copy of a CD.  This is exactly what you want placed onto a USB drive – no conversion desired.

Ah... mystery solved. Right after boot, I hit the TAB key. A line of text appeared at the bottom, with the last commands as follows:

check .quiet

I deleted the .quiet and hit ENTER.

Lo and behold... CentOS7 wants a 64 bit processor, so it dies there. :( The .quiet was hiding it from me.

I'm now checking into Dave Allen's suggestion for RRAbuntu (downloading now)

Will the dd software convert THAT ISO into a bootable USB drive? :)

I also found a link to "dd for Windows" and now I'm looking at that. It claims that it DOESN'T do any "conversion"... so if I'm reading that right, it would just COPY the ISO onto the thumbdrive? Or will it create the necessary files & structures from the ISO to make the thumbdrive bootable?

That’s correct.  You want a straight “bit-for-bit” copy, with no conversion of any kind.
