Ah... mystery solved. Right after boot, I hit the TAB key. A line of text appeared at the bottom, with the last commands as follows:

check .quiet

I deleted the .quiet and hit ENTER.

Lo and behold... CentOS7 wants a 64 bit processor, so it dies there. :( The .quiet was hiding it from me.

I'm now checking into Dave Allen's suggestion for RRAbuntu (downloading now)

Will the dd software convert THAT ISO into a bootable USB drive? :)

That’s correct.  You want a straight “bit-for-bit” copy, with no conversion of any kind.
